One of a Italian’s favorite foods is pizza. Piled high with cheese and vegetables, a soft dough and tangy sauce, nothing could be better. Well, maybe if it were for dessert. Here is a spin on a dessert pizza. If fruit salad and pizza were to hook up in some strange imaginary reality where food could procreate, this would be the end result.
-4 cups graham cracker crumbs
-3 tablespoons of butter, melted
-1/4 cup powdered sugar
-1/3 cup water
-juice of one lemon
-2 cups vanilla yogurt
-1 8 oz package of cream cheese
-1 package of strawberries
-1 package raspberries
-1 package blackberries
-1 small can mandarin oranges, drained
-1 cup sugar
Preheat oven to 350. In a medium bowl, combine graham cracker crumbs, 1/2 cup sugar and butter and mix by hand until fully blended. Grease a pizza pan completely to keep from sticking, If you don’t have a pizza pan, use a regular baking sheet instead. Press graham cracker mixture onto pan making sure the layer is even and not too thin. If it is too thin it will not hold the fruit. Once you have made about a 1/4 inch thick crust, cook in the oven for about 10 minutes. Meanwhile in a small bowl, combine powdered sugar, lemon juice, and water. Whisk thoroughly until a creamy consistency is reached. In a separate bowl, blend yogurt, cream cheese, and 1/2 cup remaining sugar until smooth. Slice kiwis and strawberries and set aside. Wash remaining fruits and combine in a bowl. Once crust is finished, place on a counter to cool for about 20 minutes. Spread yogurt and cream cheese mixture over crust generously. Arrange fruit on top, making small spaces between for easy slicing. Finally, take the lemon sugar frosting and drizzle over fruit. Place pizza in refrigerator to chill for 15 minutes. Slice pizza style and serve.
