Gluten-Free crust pizza

Most people have seen a recipe or 20 for preparing pizza crust using cauliflower, but what about making one from beets? Runnin Srilankan has come up with a fabulous paleo recipe to prepare pizza crust using beets and she has graciously allowed me to share it.
I just love beets and it never occurred to me that they would make a great pizza crust. I can’t wait to try out this recipe!
Ingredients
1 and 1/4 cup beets (3 beets wrapped in foil and roasted at 400 degrees for 45 minutes)3/4 cup quinoa flour 1/2 cup hazelnut meal2 teaspoons baking powder1/2 teaspoon salt1 egg1 tablespoon coconut oil
Instructions
Preheat oven to 360 degreesMix all the ingredients together – the mix will be wet.Using a spoon, smooth out beet crust to about 1/3 inch thick onto a parchment lined baking trayBake for 25 minutesTake out and top with tomato paste or hummus and other toppings of your choiceBake for another 10-15 minutes till cheese is melted
Top your pizza with whatever tickles your fancy, like: tomato paste, broccoli, red and yellow peppers, cheese, cilantro, red pepper flakes, black beans, and corn. I am going to use dairy-free cheese and lots of roasted veggies on mine.
