Half pound of salmon fillet
Red potato (peeled and finely chopped), 1 piece
Shallot (minced), 1 piece
Large egg (lightly beaten), 1 piece
Breadcrumbs with Italian seasoning, 1/4 cup
Italian seasoning (dried), 1 teaspoon
Salt and black pepper
Crumbs of cornflake, 1/2 cup
Extra virgin olive oil, 2 tablespoons
Prepare the oven by preheating it to 350 degrees Fahrenheit. Then, grease a baking dish and set aside. Place the filleted salmon in the baking dish. Cover with a lid and bake it for about 20 minutes.
Meanwhile, fill a saucepan with water. Put the peeled potatoes inside and cover. Let the water boil, which is after about 15 minutes. Cook the potatoes until these are tender. Remove the potatoes from the pan and drain before mashing them.
