If you want a meal in a minute, here’s a way to make delicious individual pizzas for yourself, your friends, or your family in about 15 minutes. These little pizzas are so good, so easy, and so quickly put together that everyone will be amazed.
All you need is some pita bread, pizza sauce, and some cheese. Pita bread is widely available now and there are some wonderful choices for flavors and fiber content. If you don’t have pita, use another type of flat bread (naan works wonderfully, too!)
Optional additional toppings on these little gems are the same with any other pizza. Fresh cilantro is absolutely wonderful or try fresh pineapple. Additionally, of course, you can use peppers, mushrooms, pepperoni, etc. Make them to order for each member of the family ‘ it’s so easy to do!

On a cookie sheet greased with a little olive oil, place the piece of pita bread. Brush a little olive oil on the bread and spread it with the pizza sauce (leave just a tiny bit of edge so it won’t run off during baking). Put on any optional toppings you desire, then sprinkle evenly with the parmesan, then the co-jack, and top with the mozzarella. Bake at 400 degrees for 10 minutes or until the cheese is melted and bubbly. Let sit for a couple minutes prior to slicing with a pizza cutter. Enjoy!

Directions for making Pizza Sauce: Mix all ingredients together. Store the leftovers in the refrigerator for up to two weeks.
