This Skinny Girl Margarita recipe will surely knock the socks of your guests!
Cinqo de Mayo is fast approaching and its almost time to get together with your amigas (and amigos) for a pitcher or two of Skinny Girl Margaritas. If you want to really spice up your fiesta, use homemade spicy pepper-infused tequila that you make the week before.
The Skinny Girl Margarita was made famous by Bethenny Frankel on the Real Housewives of New York television show, intended to makeover the 500-calorie margarita we have come to know and (perhaps) love at the standard Mexican restaurant chain.
Ingredients for a Pitcher of Skinny Girl Margaritas:
o4.5 ounces pepper-infused silver tequila (or your favorite)
o3 ounces lime juice (fresh is best or you can use lemon)
o1 – 1/2 ounces agave nectar (with half the calories of Triple-sec)
oIce
oSalt and lime wedges
Directions:
oSince its a special occasion, lets sweeten it up just a little. Instead of a salted rim, moisten the rim of the glasses with the lime wedge, and dip the glasses in a mixture of salt and sugar. You want lightly salted/sugared glasses.
oStir well in the pitcher with ice, and strain into fresh ice in prepared glasses.
oGarnish with a lime slice.
You can also prepare as a blended drink. Start with a half a blender of ice and mix with the tequila, lime and agave nectar until smooth. Pour into salted or salted/sugared glasses and garnish with lime. Delicious!
Directions for the Pepper-Infused Tequila:
Pour half of a bottle of tequila in a separate bottle. Cut one to three hot peppers in half lengthwise. Jalapeno, serrano or habanero will work. De-seed the peppers and put the halves in with half of the tequila in one of the bottles.
Keep the other half for diluting the mixture in case it gets too hot. Set the peppered bottle aside, but not for too long. Taste it in a day, and depending on the peppers, it may be hot enough. It may already be a little too hot. It may take up to a week. Since the strength of the infusion depends on the heat in the peppers, it will vary every time.
For authentic Mexican flavor, use Mexican (also known as key) limes if you can find them. Lemons are sometimes used, but remember, before margaritas, tequila was enjoyed with lime and a little salt. That was all.
Be sure to use the best tequila you can afford. We have recommended the silver (or blanco) tequila, but a reposada or the anejo will give you an even more wonderful experience.
Gold (or oro) tequila has other ingredients besides the blue agave, which can make it harsher and less pleasing. Check your label for 100% blue agave.
